Vacuum packing is a method of packing that removes air from a package before sealing it. The purpose of vacuum packaging is usually to remove oxygen from the container to extend the shelf life of the food, and to adopt flexible packaging forms to reduce the contents and the volume of the packaging.
Vacuum packing , also known as decompression packaging, is to extract and seal all the air in the packaging container to keep the bag in a high decompression state. The main function of vacuum bag is to remove oxygen, so as to prevent food deterioration. Its principle is relatively simple, because food mildew is mainly caused by the activities of microorganisms, and most microorganisms (such as molds and yeasts) need oxygen to survive. Vacuum packaging uses this principle to pump out the oxygen in the packaging bag and food cells, so as to make the micro objects lose "health" The environment for survival. The results show that: when the oxygen concentration in the packaging bag is less than 1%, the growth and reproduction rate of microorganisms will drop sharply. When the oxygen concentration is less than 0.5%, most microorganisms will be inhibited and stop breeding. (Note: vacuum packaging can not inhibit the reproduction of anaerobic bacteria and the deterioration and discoloration of food caused by enzyme reaction, so it should be combined with other auxiliary methods, such as refrigeration, quick freezing, dehydration, high temperature sterilization, irradiation sterilization, microwave sterilization, salting, etc.) In addition to inhibiting the growth and reproduction of microorganisms, vacuum deoxidation also plays an important role in preventing food oxidation. Due to a large number of unsaturated fatty acids in fatty foods, they are oxidized by oxygen, which makes the food taste and deteriorate. In addition, oxidation also causes the loss of vitamin A and C, and the unstable substances in food pigments become dark by oxygen. Therefore, deoxidization can effectively prevent food deterioration and maintain its color, aroma, taste and nutritional value.
